Here is the recipe I used and modified a bit:
Ingredients:
- 2 cups of chex mix (100% fortified iron for his anemia), crushed
- 1 cup of oatmeal
- 1 cup of rolled oats
- 2 tablespoons of flax
- 1.5 tablespoons of cinnamon
- an 8oz container of low fat fruit yogurt
- 1 container of sugar-free applesauce
- 1teaspoon of vanilla
- 1/3 cup of clover honey
- 1 egg, beaten
- 1 tsp of baking soda
- 1 tsp of baking powder
- 1/2 cup of craisins
Directions:
- Preheat oven to 350*
- Put the crushed cereal, oatmeal, granola, flax and cinnamon in a medium size mixing bowl and set aside
- In a separate mixing bowl, combine the yogurt, applesauce, vanilla, honey, beaten egg and mix well
- add the baking soda and powder to the yogurt mixture and mix well
- gradually, add the cereal mixture to the yogurt mixture and stir well
- add the craisins and mix to combine
- scoop a handful out and shape in long, log type bars and put on a greased baking sheet
- Bake at 350* for 15 - 18 minutes, cool and store in an air-tight container.
These are really delicious and I feel much better about my son eating these rather than the ones with a shelf life of 100 years:)
