Homemade Granola Bars....

Cyrus eats a LOT of bars...they are pretty much his favorite snack which is great because they are easy on the go. Here is my problem with them though, even the organic ones have an incredible amount of sugar and hydrogenated blah blah blah and I'm just not comfortable with it so, I decided to make homemade bars from scratch putting in all good things and leaving out all the bad things...

Here is the recipe I used and modified a bit:
Ingredients:


  • 2 cups of chex mix (100% fortified iron for his anemia), crushed

  • 1 cup of oatmeal

  • 1 cup of rolled oats

  • 2 tablespoons of flax

  • 1.5 tablespoons of cinnamon

  • an 8oz container of low fat fruit yogurt

  • 1 container of sugar-free applesauce

  • 1teaspoon of vanilla

  • 1/3 cup of clover honey

  • 1 egg, beaten

  • 1 tsp of baking soda

  • 1 tsp of baking powder

  • 1/2 cup of craisins

Directions:



  • Preheat oven to 350*

  • Put the crushed cereal, oatmeal, granola, flax and cinnamon in a medium size mixing bowl and set aside

  • In a separate mixing bowl, combine the yogurt, applesauce, vanilla, honey, beaten egg and mix well

  • add the baking soda and powder to the yogurt mixture and mix well

  • gradually, add the cereal mixture to the yogurt mixture and stir well

  • add the craisins and mix to combine

  • scoop a handful out and shape in long, log type bars and put on a greased baking sheet

  • Bake at 350* for 15 - 18 minutes, cool and store in an air-tight container.

These are really delicious and I feel much better about my son eating these rather than the ones with a shelf life of 100 years:)
