Jambo means "hello" in Swahili...this is pretty much my extent of Swahili. I picked up a few words and phrases when I climbed Kili in 2000 but that was a LONG time ago. We are hosting a teacher from S. Africa for dinner tonight at our house. She is here for the International Emerging Leaders Conference put on by Collegiate (2nd annual). There are teachers and students from over 10 different countries represented and they are here for the week working on global environmental issues pertinent to their respective countries. It's a cool idea and similar to the program, Roundsquare, that I directed at Baylor many moons ago.
Virginia, from S. AFrica, will be joining us for dinner along with Tim Lengel, Pascal & Crystal Losambe, Chris Lim, Kelly Tracy, and of course, Brad and Cy. I am going to make the Clean Eating Soy and Edamame Stirfry over brown rice with a side of baked butternut squash. I think Chris is bringing a dessert (he is a phenomenal cook) and Pascal is bringing a salad.
I am grateful that Pascal and Crystal will be joining as he is actually from S. Africa and grew up there so the conversation should flow smoothly, in hopes:) I am also excited that Cyrus will get the opportunity to meet Virginia, hear her accent and learn about where she is from. I am going to show him were Africa is on our World Map and print off a map of Africa for him to show him where S. Africa is. He is super interested in location right now. I found this great print of a map on canvas that I have hung up in his room and he loves to show me where he was born, where he lives, where his cousins live, etc...it's cute:)
Update: Dinner was a huge success, aside from the fact that Pascal forgot to mention that his wife is deathly allergic to nuts, and the whole meal had nuts in it. Luckily, I had some pasta and homemade sauce in the fridge that I zapped for her and all was well. Chris brought this delicious berry pie over which was to die for!!! Yum. It was a great night!
