New Year's Day Dinner

All the parents came over tonight for a delicious New Year's Day dinner. I used my new crock pot to make our annual sauerkraut dish (sauerkraut, turkey kielbasa, carrots, and kale), my mom made her pork and sauerkraut meal and Doc and Jill brought the southern classic of black eyed peas and sausage. It was so yummy!

Brad told me a few days ago that he wants to go vegetarian for awhile. I was a vegetarian for about 10 years so I am ok with it but we do have some meat in the fridge that we've been trying to eat. So, after the meal tonight we're pretty cleared out in the meat department. I have actually made a few DELICIOUS dinners this week that were meat free and yummy. My only stipulation is that we are not going to fall back on rice or pasta every night just to fill up (which is what I did when I was a vegetarian). So, I've been looking on Pinterest for good recipes and of course, there are tons and tons. My favorites this week were Cuban lack beans, coconut and lime rice, and mango & a Kale, Leek, and Lentil with Tempeh dish. Yum.
